This quintessential Yarra Chardonnay comes from a twenty six year old south facing vineyard in Panton Hill which is on the North Western edge of the Yarra Valley. The topsoils in this part of the Yarra are quite shallow and gravelly which impart a lovely savoury character to the wine.
Whole bunch pressed to French oak barriques (33% new) for indigenous fermentation. The wine was then left on lees for ten months to add texture and flavour.
